I love coconut oil.

I started cooking with coconut oil about a year ago after I did my first cleanse with the Clean Program and was searching for healthy fat alternatives. Many of my blogger friends talked about how amazing coconut oil was and I decided I would try it. It sounded strange – an oil that is solid at room temp – but the moment I tried it, I was convinced. This was the best oil I had ever tried.

I use coconut oil in almost everything now, but I especially love using it in my baked goods. I’m always trying to make my desserts healthier, so incorporating coconut oil has not only elevated the flavor of my gluten-free treats, but it has also boosted the nutrition content (especially when I use whole-grain flours like quinoa, millet and brown rice).

Alyssa Rimmer is the quinoa obsessed girl behind the gluten-free blog, the Queen of Quinoa.     I love using Coconut Oil in baking as well as stirfrying veggies & chicken it changes the flavor just a bit and is a delightful light flavor substitution for sesame oil or soy sauce.

    I really want to try to make the gluten free zucchini bread. My boyfriend recently discovered that he’s gluten intolerant. We’re trying to figure out yummy bread options since sadly bread is one of his favorite foods. I’ve heard a lot of good things about this bread, so I want to give it a go!

    I have got rid of all oils except EVOO, EVCO and EVSO (I need a light oil for certain recipes). EVCO goes in absolutely everything I make. I add it to my tea, smoothies, yogurt, stir fries… you name it. Because it’s the oil I use the most, I have to buy it often. It would be nice to get a jar to tide me over until my next gallon tub order!

    I still drink coffee( Bullet proof brand coffee) once and a while I no longer use diary but I used to love lattes…so now I take a cup of hot coffee and put in in my blender and add one and half teaspoons of refrigerated Tropical Traditions Coconut oil in my blender and blend on high for a few seconds, for me it is a perfect diary replacement product.     I recently learned to use coconut oil in my baking and I love the difference, especially in gluten-free baked items. It some magical way makes things lighter and fluffier than other oils. If I win, I’ll use the coconut oil to make coconut banana muffins! If I don’t win, I’ll likely make them anyway. :)
