Thank goodness for my BlendTec. I would never have considered throwing carrots into a blender before I picked up one of these magical machines. I know the price can throw some people off, but it seriously has changed my life. Prime example being this carrot cake smoothie.
It’s rich and creamy, and everything that a smoothie should be. A silky smooth beverage that my old blender would never have been able to create. And not to mention, it tastes like a piece of cake in a glass. Heavenly.
I’m very particular about my smoothies. It’s all about texture for me. Some people like thin smoothies, that you can sip almost like a juice, but I’m the exact opposite. Call me Miss Looney-bins but I would eat every single smoothie with a spoon, if I could. Which is just what I did with this carrot cake smoothie.
Most of the time, my smoothies are my meals. Rarely do I make smoothies as a snack, I find them too filling and would much rather make a giant glass of deliciousness than be left wanting more. Whether it’s breakfast, lunch or dinner, smoothies always hit the spot, especially when I make it a point to make them feel like a real meal.
Which means it’s got to be thick, velvety and smooth. Like soft serve ice cream, only not ice cold.
So, what sparked the carrot cake smoothie idea (aside from my adoration of all things involving carrot cake)? Simply put, I had carrots in my fridge, didn’t have bananas or any other soft fruit to throw into my liquid breakfast, and figured I have a super powerful blender, why wouldn’t it whip carrots into a delightful beverage? And guess what, it totally does!
Care for a slice of cake for breakfast? I think this might be my dream come true.
- 1/2 cup water
- 1/2 cup milk of choice
- 3 medium carrots
- 1/4 of a medium zucchini
- 1 cup broccoli slaw (I buy this from Trader Joe's, simply use broccoli stem in its place)
- 1/4 of a medium avocado
- 1/2 cup frozen mango/pineapple chunks
- 1 scoop vanilla protein powder (I like Sun Warrior)
- 1 medjool date, pitted (optional for more sweetness)
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves
- Stevia powder to taste
- Add all ingredients to a high powered blender in the order listed. Blend on low for 1 minute, then turn to high for another minute, or until completely smooth.
- Pour into a glass, garnish with shredded carrots or a sprinkle of cinnamon, and serve.
