First, the recipe for Chocolate Quinoa Crunch Bars!
- ¼ cup coconut oil, melted
- 2 tablespoons pure maple syrup
- ½ cup unsweetened cocoa powder
- 1 teaspoon stevia powder (or more to taste)
- ½ cup quinoa crispies, some set aside for garnishing (I get mine from Edison Grainery)
- Sea salt to garnish (I like Edison Grainery’s Pink Himalayan Salt)
- Line a 8 x 8 baking dish with parchment paper and spray the exposed sides with non-stick cooking spray. Set aside.
- In a small mixing bowl, combine the coconut oil and maple syrup.
- Stir in the cocoa powder and stevia until it starts to thicken.
- Add the quinoa crispies (minus the amount you set aside for garnishing), and mix until full incorporated.
- Spoon the chocolate-quinoa mixture into the dish and spread with a spatula until it’s uniform and smooth on the top.
- Sprinkle with remaining quinoa crispies and sea salt.
- Place the baking dish in the freezer for at least two hours, until the chocolate bars have hardened.
- Cut into squares and enjoy!
- note: store the uneaten chocolates in the freezer so they don’t melt.
And now, the giveaway!!
