This healthy little gem brings a rich texture and amazing flavor to your treats. From cookies, to waffles, to pancakes, to muffins, to cakes, to you-name-it, quinoa rocks it all.

Today’s recipe is all about using quinoa to elevate a classic cookie to new heights. And we’re doing just that. This cookie is out of this world good. Naturally gluten-free, free of refined sugars and low in fat, you will find yourself stopping your own hand from reaching for more.

    I can’t seem to find the ‘Quinoa Coconut Macaroon’ recipe on your blog. I see images and descriptions of the cookie but no recipe or ingredients . Is there somewhere I need to be looking specifically?

    We tried it we loved it! But dang I think my youngest has a coconut allergy!! I did put them on broil in the oven to make them crunchy my kids love crunchy!! I have a 2 yr old and a 10mo old both approved! I’m also obsessed with quinoa love your blog!

    • Yay, I’m so happy everyone liked them! And broiling is such a good idea! Did you bake and then broil or just broil the whole time? You’re making me crave cookies. I think some baking is in store for me tonight :)
