
When I was a little girl I hated salsa. I didn’t like anything spicy. The acidity of salsa threw me off. The slimy tomatoes, crunchy onions and cilantro gave me the shivers. Especially the cilantro.
Oh how I hated cilantro {that and dill, ick}. With a passion. It was like my body rejected it, even the smell. I wouldn’t go near the herb with a 10 foot pole.
But now I’m practically a grown up. I’ve come to appreciate salsa for what it is. A fabulous dip that can be used in all kinds of cuisines, in hundreds {if not thousands} of different ways, and almost always uses a combination of fresh herbs and produce.
Usually I stick with the same ol’ Pico de Gallo that I’ve been whipping up for years. Only a few simple ingredients, tossed in the food processor, pulsed quickly, and bam you’ve got salsa.
But I’ve started spreading my wings and exploring new territory. I’m heading into uncharted waters and totally loving life.
Especially when life involves peaches.

Char grilled peaches.
Have you tried them? They’re to die for. Drool worthy. Out-of-this-world good.
You already know how much I love peaches, but my eyes have been opened to a whole new world. of this fab little fruit When I first tasted one of these babies, my taste buds were in heaven.
The softness of the peaches is magical. They’re like little juicy pillows that are full of sweetness and charm. They melt in your mouth. But these peaches are different. They’re grilled. They’re smokey and luscious and addicting, all at the same time.
Heavenly.
- 2 ripe peaches, pitted and sliced in quarters
- ½ red onion diced
- 1 ripe tomato, diced
- 1 jalapeno pepper, seeded and diced
- 2 tablespoons chopped cilantro
- ½ lime, juiced
- Salt & pepper to taste
- Olive oil / olive oil spray
- Preheat a cast iron grill pan (or charcoal / gas grill) on medium high heat.
- When the pan or grill is piping hot, brush the peaches with olive oil and place them flesh side down on the grill.
- Grill 5 – 8 minutes, rotating if needed, until the peaches are softened but not mushy.
- While the peaches are cooking, add the remaining ingredients to a mixing bowl and stir with a wooden spoon until everything is fully combined.
- Once the peaches are done cooking, remove them from the grill and transfer them to a cutting board.
- Dice the peaches and add them to the bowl.
- Toss together and serve.
- Enjoy!
